Ingredients
- 2 c. Bisquick mix
- 1 1/2 c. shredded raw zucchini squash
- 3/4 c. sugar
- 1/4 c. vegetable oil
- 3 eggs
- 1 tsp. vanilla
- 2 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/2 c. chopped nuts
Method
- Heat oven to 350°.
- Grease bottom only of loaf pan (9 x 5 x 3-inch).
- Beat all ingredients on low speed 30 seconds.
- Then beat 30 seconds on medium speed, scraping bowl occasionally.
- Pour into pan.
- Bake until wooden pick inserted in center comes out clean, 50 to 55 minutes.
- Cool 10 minutes.
- Remove from pan.
- Cool completely before slicing.
