Ingredients

  • 2 c. Bisquick mix
  • 1 1/2 c. shredded raw zucchini squash
  • 3/4 c. sugar
  • 1/4 c. vegetable oil
  • 3 eggs
  • 1 tsp. vanilla
  • 2 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1/2 c. chopped nuts

Method

  • Heat oven to 350°.
  • Grease bottom only of loaf pan (9 x 5 x 3-inch).
  • Beat all ingredients on low speed 30 seconds.
  • Then beat 30 seconds on medium speed, scraping bowl occasionally.
  • Pour into pan.
  • Bake until wooden pick inserted in center comes out clean, 50 to 55 minutes.
  • Cool 10 minutes.
  • Remove from pan.
  • Cool completely before slicing.
