Ingredients

  • 2 c. flour
  • 3 tsp. cinnamon
  • 2 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 3 eggs, beaten
  • 2 c. sugar
  • 1 c. oil
  • 1 tsp. vanilla
  • 2 c. shredded zucchini
  • 1 c. chopped nuts
  • raisins (optional)

Method

  • Combine oil, eggs, sugar and zucchini.
  • Add vanilla and blend well.
  • Mix dry ingredients together.
  • Stir dry ingredients into egg mixture, a small amount at a time.
  • Stir in nuts and raisins. Do not beat.
  • Bake at 325° for 1 hour in small loaf pans or 1 1/2 hours in large cake pan.
