Ingredients

  • 2 3/4 c. all-purpose flour
  • 1 tsp. soda
  • 3 tsp. cinnamon
  • 2 c. zucchini (uncooked), shredded like slaw
  • 1/2 c. chopped nuts
  • 1/4 c. whole-wheat flour
  • 1 tsp. salt
  • 1 c. sugar
  • 4 eggs, beaten
  • 1 c. oil or melted shortening

Method

  • Place all dry ingredients in a large mixing bowl.
  • With a spoon, make a deep well in the center.
  • In this well, add all the other ingredients.
  • Stir carefully, just enough to dampen all the dry ingredients.
  • Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans. Bake 1 hour at 350°.
