Ingredients
- 1 lb. ground beef
- 1 c. onions, chopped
- 3/4 c. green pepper, chopped
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 5 c. diced zucchini
- 2 large tomatoes, peeled and chopped
- 1 1/4 c. whole kernel corn
- parsley and garlic to flavor
Method
- Saute beef, onions, green pepper and garlic in 12-inch skillet until well browned.
- Add remaining ingredients.
- Cover and simmer for 10 to 15 minutes or until vegetables are tender.
