- 1 medium size yellow squash, sliced
- 1 medium sized zucchini, sliced
- 1 can stewed tomatoes, crushed
- 2 Tbsp. vegetable oil
- 1 tsp. oregano
- 1/2 tsp. garlic powder
- 1 box linguine, cooked
- 2 Tbsp. tomato paste
- 1 c. sliced onions
- 1/2 tsp. basil leaves
- salt and pepper to taste
Method
- In a large skillet, heat oil over medium-high heat.
- Add onions, zucchini and squash and saute until tender.
- Add tomatoes, tomato paste and seasonings.
- Cook, stirring until tomato paste is dissolved.
- Reduce heat to low and continue to cook, stirring occasionally until vegetables are thoroughly cooked, about 15 to 20 minutes.
- Serve over cooked linguine.
