Ingredients

  • 1 medium size yellow squash, sliced
  • 1 medium sized zucchini, sliced
  • 1 can stewed tomatoes, crushed
  • 2 Tbsp. vegetable oil
  • 1 tsp. oregano
  • 1/2 tsp. garlic powder
  • 1 box linguine, cooked
  • 2 Tbsp. tomato paste
  • 1 c. sliced onions
  • 1/2 tsp. basil leaves
  • salt and pepper to taste

Method

  • In a large skillet, heat oil over medium-high heat.
  • Add onions, zucchini and squash and saute until tender.
  • Add tomatoes, tomato paste and seasonings.
  • Cook, stirring until tomato paste is dissolved.
  • Reduce heat to low and continue to cook, stirring occasionally until vegetables are thoroughly cooked, about 15 to 20 minutes.
  • Serve over cooked linguine.
