Ingredients
- 2 Tbsp. oil
- 1 clove minced garlic
- 2 small zucchini, sliced
- 2 medium onions, sliced
- 2 medium tomatoes, sliced
- 2 medium green peppers, ringed
- 1 small eggplant, sliced
Method
- Saute garlic in oil.
- Add vegetables in layers as order given, sprinkling each layer with 1/4 teaspoon salt and pepper.
- Drizzle 1/2 tablespoon oil on top.
- Cover.
- Cook over low heat and stir occasionally.
- Cook 35 to 45 minutes.
