Ingredients

  • 1 12 lbs small tomatillos
  • 2 medium onions, quartered
  • 1 garlic, bulb use all cloves
  • 5 serrano peppers, snap off stem
  • garlic salt
  • extra virgin olive oil
  • 1 lime, juice of
  • 1 bunch fresh cilantro
  • salt

Method

  • Peel and wash tomatillos.
  • Put whole tomatillos in a 13x9 dish, add onion, garlic cloves and peppers (whole).
  • Drizzle EVOO over everything and season with garlic salt.
  • Bake at 400 degrees for an hour.
  • Let cool and put in blender.
  • Add salt, juice from lime and cilantro to taste.
