Ingredients
- 1 12 lbs small tomatillos
- 2 medium onions, quartered
- 1 garlic, bulb use all cloves
- 5 serrano peppers, snap off stem
- garlic salt
- extra virgin olive oil
- 1 lime, juice of
- 1 bunch fresh cilantro
- salt
Method
- Peel and wash tomatillos.
- Put whole tomatillos in a 13x9 dish, add onion, garlic cloves and peppers (whole).
- Drizzle EVOO over everything and season with garlic salt.
- Bake at 400 degrees for an hour.
- Let cool and put in blender.
- Add salt, juice from lime and cilantro to taste.
