Ingredients
- 1 1/2 lb. red potatoes
- 1/4 c. low-fat (1 percent) milk
- 1/2 c. fresh cilantro leaves and stems
- 1 tsp. salt
- 1 tsp. grated fresh lime zest
- 1/4 tsp. ground black pepper
- 1 container plain low-fat yogurt
Method
- In 4-quart saucepan, place potatoes and enough water to cover; heat to boiling over high heat.
- Reduce heat to low; cover and simmer 10 to 12 minutes or until potatoes are fork-tender.
- Drain.
- Return potatoes to saucepan.
- With potato masher, coarsely mash potatoes.
- Stir in milk.
- Add cilantro, salt, lime zest, pepper, and yogurt, and continue to mash until well blended but still lumpy.
- Heat through if necessary.
