Ingredients

  • 1 1/2 lb. red potatoes
  • 1/4 c. low-fat (1 percent) milk
  • 1/2 c. fresh cilantro leaves and stems
  • 1 tsp. salt
  • 1 tsp. grated fresh lime zest
  • 1/4 tsp. ground black pepper
  • 1 container plain low-fat yogurt

Method

  • In 4-quart saucepan, place potatoes and enough water to cover; heat to boiling over high heat.
  • Reduce heat to low; cover and simmer 10 to 12 minutes or until potatoes are fork-tender.
  • Drain.
  • Return potatoes to saucepan.
  • With potato masher, coarsely mash potatoes.
  • Stir in milk.
  • Add cilantro, salt, lime zest, pepper, and yogurt, and continue to mash until well blended but still lumpy.
  • Heat through if necessary.
