Ingredients

  • 12 c. yellow squash, sliced 2 c. chopped onions
  • 2 red peppers, chopped
  • 2 c. white vinegar
  • 3 c. sugar
  • 2 tsp. mustard seed
  • 2 tsp. celery seed
  • 2 tsp. salt (not necessary)

Method

  • Cover squash, onions and peppers with cold water that has 2 Tbsp. salt (pickling) added to it. Let stand for 2 hours, then drain off water.
  • Make a syrup of vinegar and sugar.
  • Put mustard see and celery seed in a cheese cloth and put with syrup mixture. Boil mixture then add drained squash, onions, and peppers.
  • Bring to a boil again and cook for 5 to 10 minutes.
  • Pack in hot jars and seal.
