Ingredients
- 12 c. yellow squash, sliced 2 c. chopped onions
- 2 red peppers, chopped
- 2 c. white vinegar
- 3 c. sugar
- 2 tsp. mustard seed
- 2 tsp. celery seed
- 2 tsp. salt (not necessary)
Method
- Cover squash, onions and peppers with cold water that has 2 Tbsp. salt (pickling) added to it. Let stand for 2 hours, then drain off water.
- Make a syrup of vinegar and sugar.
- Put mustard see and celery seed in a cheese cloth and put with syrup mixture. Boil mixture then add drained squash, onions, and peppers.
- Bring to a boil again and cook for 5 to 10 minutes.
- Pack in hot jars and seal.
