Ingredients
- 8 c. sliced squash
- 2 c. sliced onions
- 1/2 c. diced green pepper
- 1 Tbsp. salt
- 1 c. cider vinegar
- 1 3/4 c. sugar
- 1/2 tsp. celery seed
- 1/2 tsp. mustard seed
Method
- Combine squash, onion and green pepper.
- Sprinkle with salt and let stand 1 hour.
- Combine vinegar, sugar, celery seed and mustard seed.
- Bring to boil.
- Add squash, onion and green pepper and return to boil.
- Pack in hot, sterilized jars, covering with vinegar mixture.
- Seal.
- Yields 4 pints.
