Ingredients

  • 1/2 c. very warm water
  • 1 (1/4 oz.) pkg. dry yeast
  • 2 c. very warm milk
  • 1/2 c. (1 stick) butter, melted
  • 1 tsp. salt
  • 1 tsp. sugar
  • 2 c. all-purpose flour
  • 2 eggs
  • 1/2 tsp. baking soda
  • 1 c. small curd cottage cheese
  • 1 c. grated peeled cooking apple (1 large)
  • 1/2 c. unbleached flour
  • 1/4 c. wheat flour
  • 1 Tbsp. honey
  • 1 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 4 eggs, separated (at room temperature)
  • 1/8 tsp. cream of tartar
  • melted unsalted butter
  • powdered sugar

Method

  • Combine first 8 ingredients in bowl and blend in egg yolks. Beat whites and cream of tartar in another bowl until stiff, but not dry.
  • Fold 1/4 whites into batter.
  • Fold in remaining whites.
