Ingredients

  • 6 c. sliced, cooked yams (they steam well)
  • 2 oranges, pared and sliced thin
  • 1/4 c. juice (orange, apricot or cider)
  • 3 Tbsp. soft or melted margarine
  • 1/3 c. or more pecans, broken up (or walnuts)
  • cinnamon and nutmeg

Method

  • Arrange half of yam slices in greased 1 1/2-quart casserole. Top with half the orange slices, 2 tablespoons brown sugar and some nuts and spices.
  • Then repeat layers.
  • Garnish with additional orange slices.
  • Combine juice and margarine; pour over all.
  • Bake at 325° about 50 minutes.
