Ingredients
- 6 c. sliced, cooked yams (they steam well)
- 2 oranges, pared and sliced thin
- 1/4 c. juice (orange, apricot or cider)
- 3 Tbsp. soft or melted margarine
- 1/3 c. or more pecans, broken up (or walnuts)
- cinnamon and nutmeg
Method
- Arrange half of yam slices in greased 1 1/2-quart casserole. Top with half the orange slices, 2 tablespoons brown sugar and some nuts and spices.
- Then repeat layers.
- Garnish with additional orange slices.
- Combine juice and margarine; pour over all.
- Bake at 325° about 50 minutes.
