Ingredients

  • 4 medium yams or 1 large can (4 c.)
  • 2 sticks butter, melted
  • 2 eggs, beaten
  • 1/2 c. light or dark molasses
  • 2 tsp. vanilla
  • 1 c. flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 c. sugar
  • 1 tsp. nutmeg

Method

  • Peel yams and grate if using fresh. Stir together the yams and melted butter. Add eggs, beating after each one. Add milk, molasses and vanilla. In another dish, stir together flour, salt, cinnamon, sugar and nutmeg. Add to yam mixture and blend well. Pour into a 2 1/2-quart casserole dish. Bake at 325° for 2 1/2 hours, stirring several times during
  • the first hour. Serve hot or cold. May be reheated.
