Ingredients
- 1 (3 to 4 lb.) chicken, cut up
- 2 Tbsp. margarine
- 1 Tbsp. lemon juice
- salt and pepper to taste
- 1 1/2 c. instant rice
- 1 (14 1/2 oz.) can chicken broth
- 1/2 c. water
Method
- Combine margarine and lemon juice.
- Brush chicken with mixture.
- Sprinkle with salt and pepper.
- Place in baking dish. Bake at 400° for 30 minutes.
- Combine rice, chicken broth and water in medium saucepan.
- Bring to boil.
- Reduce heat.
- Cover and simmer about 5 minutes or until broth is absorbed.
- Serve next to baked chicken.
