Ingredients

  • 1 (3 to 4 lb.) chicken, cut up
  • 2 Tbsp. margarine
  • 1 Tbsp. lemon juice
  • salt and pepper to taste
  • 1 1/2 c. instant rice
  • 1 (14 1/2 oz.) can chicken broth
  • 1/2 c. water

Method

  • Combine margarine and lemon juice.
  • Brush chicken with mixture.
  • Sprinkle with salt and pepper.
  • Place in baking dish. Bake at 400° for 30 minutes.
  • Combine rice, chicken broth and water in medium saucepan.
  • Bring to boil.
  • Reduce heat.
  • Cover and simmer about 5 minutes or until broth is absorbed.
  • Serve next to baked chicken.
