Ingredients

  • 2 1/4 cups all purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 2 teaspoons baking soda
  • 1/2 teaspoon table salt
  • 1 cup light brown sugar, packed
  • 1 cup (2 sticks) sweet unsalted butter, at room temperature
  • 1 large egg, at room temperature
  • 1/3 cup molasses
  • 1/2 cup granulated sugar

Method

  • 1. Preheat the oven to 325oF. Line cookie sheets with parchment paper
  • 2. In a small bowl, whisk together the flour, cinnamon, ginger, cloves, baking soda, and salt, and set the bowl aside.
  • 3. Using a mixer, cream the brown sugar and butter until light and fluffy. Add the egg and beat until blended. Scrape down the sides of the bowl and add the molasses. With the mixes on low, add the dry ingredients and mix until just blended.
  • 4. Put 1/2 cup of granulated sugar on a small plate. Roll the dough into 1-inch balls, and coat them with sugar. Place the cookie dough 2 inches apart on sheet pans, and flatten them slightly with the palm of your hand.
  • 5. Bake the cookies 12 to 14 minutes, or until they are golden brown.
