Ingredients

  • 5 c. water
  • 1 c. lentils
  • 1/2 c. barley
  • 1 c. celery, chopped or celery tops
  • 1 medium onion, chopped
  • 1 to 2 medium potatoes, diced
  • 2 to 3 chopped carrots
  • 1/4 c. minced parsley
  • salt or salt substitute
  • 1 to 2 packets sugar substitute
  • 1/2 can tomato paste
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. dill leaves (weed)

Method

  • Pick over lentils for stones and weed seeds.
  • Rinse and add to water in a crock-pot or cooking pot.
  • Add barley, celery, onion, potatoes, carrots, herbs and tomato paste.
  • Simmer until tender. Add parsley and sugar substitute.
  • Salt to taste.
