- 5 c. water
- 1 c. lentils
- 1/2 c. barley
- 1 c. celery, chopped or celery tops
- 1 medium onion, chopped
- 1 to 2 medium potatoes, diced
- 2 to 3 chopped carrots
- 1/4 c. minced parsley
- salt or salt substitute
- 1 to 2 packets sugar substitute
- 1/2 can tomato paste
- 1/2 tsp. Italian seasoning
- 1/2 tsp. dill leaves (weed)
Method
- Pick over lentils for stones and weed seeds.
- Rinse and add to water in a crock-pot or cooking pot.
- Add barley, celery, onion, potatoes, carrots, herbs and tomato paste.
- Simmer until tender. Add parsley and sugar substitute.
- Salt to taste.
