- 13 c. light mayonnaise
- 2 tbsp. fresh lemon juice
- 2 tbsp. Extra virgin olive oil
- 1 tbsp. Dijon mustard
- 1/2 tsp. salt
- 1/4 tsp. Freshly ground black pepper
- 6 c. shredded and peeled celery root
- 1 c. shredded carrots
- 1/4 c. sliced fresh flat-leaf parsley
Method
- Whisk, in large bowl, mayonnaise, lemon juice, olive oil, mustard, salt, and black pepper.
- Add celery root, carrots, and parsley.
- Toss the celery root mixture in dressing until well coated.
