Ingredients

  • Red Wine Vinaigrette
  • 1/3 cup red wine
  • 1/4 chopped shallots or red onions
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp salt
  • whisk ingredients in a small bowl
  • Salad ingredients
  • 10 oz wild rice
  • 3 scallions chopped
  • 1/2 cup hazelnuts, toasted and halved
  • (good hazelnuts at Bristol Farms & the Farm Brentwood Country Mart- Whole foods not good)
  • 1 orange
  • 1 cup seedless grapes halved
  • 1 tsp salt
  • 1 tsp black pepper

Method

  • Prepare rice
  • simmer 30 minutes so it is slightly underdone- transfer to salad bowl
  • cube the orange interior
  • add grapes, ,scallions salt and pepper & dressing , mix let stand of 30 minutes all mixed up before serving.
  • Add nuts at least minute so they don't get soggy
  • Any chopped veggies (carrots celery)or fruit are good in this. I use Kiwis cubes, a firm peach is good too. Chopped Almonds or pecans are fine substitute for Hazelnuts-get them pre-toasted because soggy ones are not good. Roman Hazelnuts from Bristol farms).
  • Add nuts at least minute so they don't get soggy
