  • 2 ONIONS QUARTERED SILCED THIN
  • 2 CLOVES OF GARLIC CRUSHED
  • 4 LBS LEAN GROUND BEEF (85%)
  • 3 TBLS CHILI POWDER
  • 4 CANS DICED TOMATOES WITH MILD CHILES (Del Monte)
  • 1 12oz CAN TOMATO PASTE
  • 4 151/2 oz CANS CHILI BEANS (Joan of Arc)
  • 1 14 1/2 oz CAN BEEF BROTH
  • Part 2
  • 3 TBLS SUGAR
  • 2 TBLS CHILI POWDER
  • 2 TBLS COCOA
  • 1 TBLS CUMIN
  • 1 TBLS SALT
  • 1 TBLS OREGANO
  • 1 TSP PEPPER
  • 1/2 TSP GARLIC POWDER
  • 1/2 TSP CINNAMON
  • 1/2 TSP DILL WEED
  • 1/2 TSP BASIL
  • 1/4 TSP ALL SPICE
  • 1/8 TSP CEYENE PEPPER
  • 2 BAY LEAVES

Method

  • Part 1
  • In a 10 qt pot
  • Sautee onion and garlic
  • Add ground beef and Chili Powder stir until meat is brown
  • Drain fat from meat return to pot
  • Add remaining part 1 ingredients.
  • Bring to boil and reduce heat to simmer.
  • Combine the part 2 ingredients and add to mixture
  • Simmer on low heat for 4-6 hours.
