Ingredients

  • 1 (6 oz.) pkg. long grain wild rice
  • 1 pkg. boneless chicken breasts, cooked
  • 1/2 tsp. salt
  • 3/4 c. mayo
  • 1 Tbsp. milk
  • 2 to 3 Tbsp. lemon juice
  • 3/4 c. seedless red grapes, cut in half
  • 3/4 c. sliced celery
  • 3/4 c. coarsely chopped cashews
  • 2 Tbsp. finely chopped spring onions

Method

  • Prepare rice according to package directions; refrigerate until chilled.
  • Cut chicken into cubes.
  • In small bowl, stir together salt, mayo, milk and lemon juice.
  • In large bowl, combine chicken, grape halves, celery, chopped cashews, onions and chilled rice.
  • Fold in mayo mixture.
  • Refrigerate 2 to 3 hours.
