- 1 (6 oz.) pkg. long grain wild rice
- 1 pkg. boneless chicken breasts, cooked
- 1/2 tsp. salt
- 3/4 c. mayo
- 1 Tbsp. milk
- 2 to 3 Tbsp. lemon juice
- 3/4 c. seedless red grapes, cut in half
- 3/4 c. sliced celery
- 3/4 c. coarsely chopped cashews
- 2 Tbsp. finely chopped spring onions
Method
- Prepare rice according to package directions; refrigerate until chilled.
- Cut chicken into cubes.
- In small bowl, stir together salt, mayo, milk and lemon juice.
- In large bowl, combine chicken, grape halves, celery, chopped cashews, onions and chilled rice.
- Fold in mayo mixture.
- Refrigerate 2 to 3 hours.
