Ingredients

  • 1 pkg. manicotti, cooked and drained
  • 1 lb. shredded Mozzarella
  • 1/2 c. grated Parmesan
  • 16 oz. Ricotta cheese
  • 8 oz. imitation crab legs, chopped (Sea Stix or Crab Delights)
  • 3 eggs
  • 1 tsp. garlic salt
  • 1 Tbsp. dehydrated onion
  • 1 Tbsp. parsley flakes
  • 1 lb. fresh mushrooms, sliced
  • 1 stick butter, melted
  • 1/4 c. chopped pimento

Method

  • Combine cheese, eggs, garlic salt, onion and parsley in a large bowl.
  • Stir in crabmeat.
  • Carefully stuff filling into cooked manicotti shells.
  • Arrange stuffed manicotti in a baking pan.
  • Melt butter and slightly cook mushrooms in butter; add pimento.
  • Pour this over manicotti, making sure to cover all with butter.
  • Bake in 350° oven for 45 to 50 minutes.
  • Let stand 5 minutes before serving.
