Ingredients
- 2/3 c. wild rice (after quick soak)
- 1/3 c. white rice
- 1 Tbsp. onion, chopped or 1 tsp. dried
- 2 Tbsp. butter or margarine
- 2 1/2 c. chicken broth or beef consomme or 3 tsp. or 3 bouillon cubes to 2 1/2 c. water
- 1 small jar mushrooms
Method
- Saute onion in butter in large skillet.
- Add wild rice and white rice.
- Cook over low heat, stirring often, about 5 minutes. Add broth and mushrooms; bring to a boil.
- Pour in greased casserole.
- Cover and bake at 350° for 1 1/2 hours.
- This does become dry, but it can be fluffed up by lightly stirring with spoon.
- Serves 6.
