Ingredients

  • 2/3 c. wild rice (after quick soak)
  • 1/3 c. white rice
  • 1 Tbsp. onion, chopped or 1 tsp. dried
  • 2 Tbsp. butter or margarine
  • 2 1/2 c. chicken broth or beef consomme or 3 tsp. or 3 bouillon cubes to 2 1/2 c. water
  • 1 small jar mushrooms

Method

  • Saute onion in butter in large skillet.
  • Add wild rice and white rice.
  • Cook over low heat, stirring often, about 5 minutes. Add broth and mushrooms; bring to a boil.
  • Pour in greased casserole.
  • Cover and bake at 350° for 1 1/2 hours.
  • This does become dry, but it can be fluffed up by lightly stirring with spoon.
  • Serves 6.
