Ingredients

  • 1 box (8 Oz. Size) Whole Wheat Quinoa Pasta
  • 1 bunch Swiss Chard
  • 2 whole Green Tomatoes
  • 3/4 cups Olive Oil
  • 4 cloves Garlic
  • 1/2 whole Lemon
  • 1/2 cups Parmesan Cheese

Method

  • Prepare the pasta according to the package instructions.
  • While doing this, wash and roughly chop the chard and tomatoes.
  • Also, heat the olive oil in a saute pan and add the garlic to the oil.
  • Allow it to infuse on low heat for several minutes (be careful not to burn the garlic).
  • Drain the pasta, add the chard to the saute pan and the pasta over the chard.
  • Also add the tomatoes.
  • Toss everything together and let the heat slightly cook the chard.
  • The tomatoes should still be nice and fresh (although you could cook them a bit if you want to).
  • Squeeze half of a lemon over the pasta and add parmesan cheese to the top.
  • Serve hot.
