Ingredients

  • 1 lb. nuts, chopped
  • 1 lb. white raisins
  • 1 c. whole candied cherries
  • 3 small jars candied pineapple
  • 1 lb. butter
  • 2 c. sugar
  • 6 eggs
  • 1/4 tsp. salt
  • 1 1/2 tsp. vanilla
  • 1 1/2 tsp. lemon
  • 4 c. flour

Method

  • Cream butter and sugar together.
  • Add eggs, 1 at a time.
  • Add lemon and vanilla.
  • Add flour to batter (reserving a little to coat fruits and nuts).
  • Mix well.
  • Add cherries, pineapple, raisins and nuts.
  • Bake at 250° in angel food pan or 2 loaf pans for 2 to 3 hours.
  • Decorate the top with some fruit and bake until light brown.
