Ingredients

  • FOR THE BREAD:
  • 1 cup Shortening
  • 2 cups Sugar
  • 4 Large Eggs
  • 2 teaspoons Vanilla Extract
  • 3-1/2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 1 cup Milk
  • 1 cup Chopped Macadamia Nuts
  • 3/4 cups White Chocolate Chips
  • FOR THE WHITE CHOCOLATE GLAZE:
  • 1 cup White Chocolate Chips
  • 2 Tablespoons Shortening

Method

  • Preheat oven at 350°F. Grease two 9"x5" loaf pans.
  • Using an electric mixer on low, stir together shortening, sugar, eggs and vanilla extract until blended. Sift flour, baking powder, baking soda, and salt. Gradually add in flour mixture to shortening mixture alternating with milk until all combined and blended. Stir in macadamia nuts and white chocolate chips.
  • Pour equal amounts into each loaf pan.
  • Bake in the preheated oven for 55-60 minutes until a tester comes out clean. Cool on a wire rack. Run a butter knife around the sides of the loaf pan and turn the loaf upside down to remove.
  • Place white chocolate chips and shortening in a microwave safe bowl. On 50% power, heat for 1 minute. Remove and stir, and continue to heat until melted. Drizzle on top of loaves and let chocolate harden before serving.
