- 4 boneless chicken breasts
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 2 Tbsp. oil
- 3 cans Great Northern beans
- 2 (15 oz.) cans white corn (Shoe Peg)
- 1 (4 oz.) can diced green chilies
- salt and pepper to taste
- 2 1/2 tsp. cumin
- 1 tsp. lemon pepper
- 2 cans chicken broth
- 2 c. water
- 1/2 tsp. oregano
- 2 Tbsp. lemon juice
- Monterey Jack cheese, shredded
- tortilla chips
Method
- In a large saucepan, cut chicken into bite size pieces.
- Cook chicken with oil, onions and garlic until tender.
- Add other ingredients and bring to a boil.
- Cover and simmer for 30 minutes. Serve with tortilla chips and top with Monterey Jack cheese, shredded.
