Ingredients

  • 4 boneless chicken breasts
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 2 Tbsp. oil
  • 3 cans Great Northern beans
  • 2 (15 oz.) cans white corn (Shoe Peg)
  • 1 (4 oz.) can diced green chilies
  • salt and pepper to taste
  • 2 1/2 tsp. cumin
  • 1 tsp. lemon pepper
  • 2 cans chicken broth
  • 2 c. water
  • 1/2 tsp. oregano
  • 2 Tbsp. lemon juice
  • Monterey Jack cheese, shredded
  • tortilla chips

Method

  • In a large saucepan, cut chicken into bite size pieces.
  • Cook chicken with oil, onions and garlic until tender.
  • Add other ingredients and bring to a boil.
  • Cover and simmer for 30 minutes. Serve with tortilla chips and top with Monterey Jack cheese, shredded.
