Ingredients

  • 1 lb. Great Northern beans
  • 8 c. water
  • 1/2 lb. salt pork
  • 3 onions, quartered
  • 16 oz. can chopped tomatoes
  • 1/4 tsp. sage
  • 1 tsp. parsley
  • 2 bouillon cubes
  • 1 bay leaf
  • 1 large garlic
  • 3 Tbsp. oil
  • 1/2 tsp. thyme

Method

  • Soak beans in water overnight.
  • Keep 3 cups liquid.
  • Add bouillon cubes.
  • Rinse pork, dry and cut into 1-inch strips. Brown in oil until crispy.
  • Add all other ingredients.
  • Cover and simmer 2 to 2 1/2 hours, or until beans are tender.
  • Good in crock-pot.
