- 1 lb. Great Northern beans
- 8 c. water
- 1/2 lb. salt pork
- 3 onions, quartered
- 16 oz. can chopped tomatoes
- 1/4 tsp. sage
- 1 tsp. parsley
- 2 bouillon cubes
- 1 bay leaf
- 1 large garlic
- 3 Tbsp. oil
- 1/2 tsp. thyme
Method
- Soak beans in water overnight.
- Keep 3 cups liquid.
- Add bouillon cubes.
- Rinse pork, dry and cut into 1-inch strips. Brown in oil until crispy.
- Add all other ingredients.
- Cover and simmer 2 to 2 1/2 hours, or until beans are tender.
- Good in crock-pot.
