Ingredients
- 2/3 c. biscuit mix
- 1/3 c. wheat germ
- 1/4 c. sugar
- 1 slightly beaten egg
- 1/2 c. water
- 2 Tbsp. peanut butter
- 1/2 tsp. vanilla
Method
- Combine biscuit mix, wheat germ and sugar.
- In another bowl, combine egg, water, peanut butter and vanilla.
- Beat with rotary beater until smooth.
- Add to dry ingredients, stirring until dry mixture is moistened.
- Don't overbeat.
- Fill muffin pans 2/3 full. Bake 20 to 25 minutes until golden brown.
- Makes 6 muffins.
- Easy to double.
