Ingredients

  • 2/3 c. biscuit mix
  • 1/3 c. wheat germ
  • 1/4 c. sugar
  • 1 slightly beaten egg
  • 1/2 c. water
  • 2 Tbsp. peanut butter
  • 1/2 tsp. vanilla

Method

  • Combine biscuit mix, wheat germ and sugar.
  • In another bowl, combine egg, water, peanut butter and vanilla.
  • Beat with rotary beater until smooth.
  • Add to dry ingredients, stirring until dry mixture is moistened.
  • Don't overbeat.
  • Fill muffin pans 2/3 full. Bake 20 to 25 minutes until golden brown.
  • Makes 6 muffins.
  • Easy to double.
