Ingredients

  • 2 chicken breasts, skinned, deboned and cut in half
  • 1/4 c. low calorie Italian dressing
  • 3/4 c. bread crumbs
  • 1/4 c. Parmesan cheese
  • 1/4 tsp. garlic powder
  • 1/4 tsp. pepper
  • 2 Tbsp. parsley flakes

Method

  • Combine bread crumbs, Parmesan cheese, garlic powder, pepper and parsley flakes.
  • Mix well.
  • Roll chicken pieces first in the dressing, then in crumb mixture.
  • Place in a baking dish which has been sprayed with Pam.
  • Bake uncovered in 350° oven for 50 to 60 minutes or until tender.
  • I find that the crumb mixture is ample to coat 6 to 8 pieces of chicken, especially if they are small.
  • I have used thighs in place of breasts and it also is a good coating for pork chops or fish (decrease the cooking time for fish).
  • I use the Pepperidge Farm herb seasoned stuffing instead of bread crumbs.
