Ingredients
- 2 chicken breasts, skinned, deboned and cut in half
- 1/4 c. low calorie Italian dressing
- 3/4 c. bread crumbs
- 1/4 c. Parmesan cheese
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
- 2 Tbsp. parsley flakes
Method
- Combine bread crumbs, Parmesan cheese, garlic powder, pepper and parsley flakes.
- Mix well.
- Roll chicken pieces first in the dressing, then in crumb mixture.
- Place in a baking dish which has been sprayed with Pam.
- Bake uncovered in 350° oven for 50 to 60 minutes or until tender.
- I find that the crumb mixture is ample to coat 6 to 8 pieces of chicken, especially if they are small.
- I have used thighs in place of breasts and it also is a good coating for pork chops or fish (decrease the cooking time for fish).
- I use the Pepperidge Farm herb seasoned stuffing instead of bread crumbs.
