Ingredients
- 1 tbsp butter
- 8 scallops
- 100g snowpeas (trimmed and halved)
- 2 cups diced watermelon
- 1 small mango (peeled and cut into 1cm pieces)
- 3 green onions (sliced)
- 16 cooked king prawns (shelled and deveined)
- 2 tsp fish sauce
- 2 tsp lime juice
- 1 tsp sugar
- 4 sprigs coriander (chopped)
Method
Heat 1 tbsp butter in a frying pan over high heat and sear 8 scallops for 20-30 seconds on each side. Remove from heat and place on a plate lined with paper towel. Blanch 100g snowpeas (trimmed and halved) in boiling water for 30 seconds. Refresh under cold water and drain. Combine 2 cups diced watermelon, 1 small mango (peeled and cut into 1cm pieces), 3 green onions (sliced) and 16 cooked king prawns (shelled and deveined) in a bowl. Add scallops and snowpeas and toss to combine. In a bowl, combine 2 tsp fish sauce, 2 tsp lime juice, 1 tsp sugar and whisk until sugar dissolves. Pour dressing over salad and toss to coat. Serve with 4 sprigs coriander (chopped).
