- 1/4 c. sliced leeks
- 1/4 c. diced red bell pepper
- 1 clove garlic, sliced
- 2 oz. uncooked brown rice
- 5 oz. scallops, quartered
- 3/4 c. water
- 1 tsp. lemon juice
- 2 tsp. olive oil
- 1 1/2 tsp. red wine vinegar
- 1 1/2 tsp. horseradish
- 2 drops hot sauce
Method
- In 1-quart casserole dish, combine leeks, pepper and garlic. Cover and microwave 2 minutes. Add rice and 3/4 cup water. Stir well and cook 5 minutes, uncovered,
- and 3 minutes covered. Add scallops and cook 3 minutes. Add remaining ingredients; stir and serve.
