Ingredients

  • 1/4 c. sliced leeks
  • 1/4 c. diced red bell pepper
  • 1 clove garlic, sliced
  • 2 oz. uncooked brown rice
  • 5 oz. scallops, quartered
  • 3/4 c. water
  • 1 tsp. lemon juice
  • 2 tsp. olive oil
  • 1 1/2 tsp. red wine vinegar
  • 1 1/2 tsp. horseradish
  • 2 drops hot sauce

Method

  • In 1-quart casserole dish, combine leeks, pepper and garlic. Cover and microwave 2 minutes. Add rice and 3/4 cup water. Stir well and cook 5 minutes, uncovered,
  • and 3 minutes covered. Add scallops and cook 3 minutes. Add remaining ingredients; stir and serve.
