Ingredients
- 125g soft butter
- 165g brown suga
- 2 eggs
- 225g self-raising flour
- 1/2 tsp bicarbonate of soda
- 1 tsp ground coriander
- 3/4 cup very ripe banana, mashed (about 11/2 large bananas)
- 90g (3/4 cup) walnut pieces
- 1/2 cup buttermilk
- 1/4 cup milk
Method
Preheat oven to 180C. Beat butter and sugar with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each. Combine sifted flour, bicarbonate of soda and coriander and fold into butter mixture. Add banana, walnuts, buttermilk and milk and stir until smooth. Grease a loaf pan and line the base with baking paper. Spread mixture into tin and bake for about 50 minutes or until a cake skewer comes out clean. Remove and rest for five minutes before turning onto a wire cake rack to cool.
Great with lashings of butter or topped with about 200g cream cheese mixed with 90g icing sugar and 1 tsp vanilla extract.
