Ingredients
- 2 bundles of young collards*
- 4 Tbsp. chopped onion
- 1 ham steak
- 6 strips bacon
- 1 small pkg. frozen okra
- 2 qt. water
- salt and pepper
Method
- Fry bacon, retaining grease. Add cleaned, chopped collards to water in a large pot. Add bacon grease, salt and pepper, bring to a boil. Cover, reduce heat and simmer for about 2 hours or until greens are tender. Add ham steak and okra and cook an additional 30 minutes. Crumble bacon on top to serve.
