Ingredients

  • 1 tbsp heaped, sunflower spread / butter
  • 1 small onion, finely chopped
  • 4 clove garlic, finely chopped
  • 175 grams dry quinoa, rinsed
  • 450 ml hot vegetable stock
  • 1 small handful flat-leaf parsley, finely chopped
  • 1/2 tsp thyme leaves
  • 1 black pepper to taste
  • 1 squeeze of lemon juice

Method

  • Melt the spread in a saucepan and gently fry the onion, garlic and quinoa until lightly browned, around 5 minutes
  • Add the stock and bring to the boil.
  • Cover and let simmer for 15 minutes or until the quinoa has absorbed all of the stock
  • Toss through the chopped parsley and thyme
  • Season to taste with pepper and serve with a squeeze of lemon juice or a lemon wedge
  • Goes great with chicken, fish or a simple salad with crusty bread
