Ingredients
- 1 tbsp heaped, sunflower spread / butter
- 1 small onion, finely chopped
- 4 clove garlic, finely chopped
- 175 grams dry quinoa, rinsed
- 450 ml hot vegetable stock
- 1 small handful flat-leaf parsley, finely chopped
- 1/2 tsp thyme leaves
- 1 black pepper to taste
- 1 squeeze of lemon juice
Method
- Melt the spread in a saucepan and gently fry the onion, garlic and quinoa until lightly browned, around 5 minutes
- Add the stock and bring to the boil.
- Cover and let simmer for 15 minutes or until the quinoa has absorbed all of the stock
- Toss through the chopped parsley and thyme
- Season to taste with pepper and serve with a squeeze of lemon juice or a lemon wedge
- Goes great with chicken, fish or a simple salad with crusty bread
