Ingredients

  • 750 grams pitted cherries
  • 3 tbsp brandy
  • 60 grams granulated sugar
  • 120 ml apple juice
  • 2 tsp arrowroot or corn starch
  • 2 tbsp water

Method

  • Put the cherries in a saucepan with the brandy, sugar and apple juice
  • Heat gently until the sugar dissolves then bring to the boil and let simmer gently for 5 minutes
  • Mix the arrowroot powder with the water
  • Pour into the pan and stir until thickened
  • Cool and chill before serving
  • Great with vanilla ice cream or with whipped cream and brandy baskets
