Ingredients
- 1 medium onion
- 2 Tbsp. butter
- 3/4 c. chicken broth
- salt to taste
- 6 medium summer squash (zucchini is wonderful)
- 1 c. light cream or half and half
- chopped chives
Method
- Saute onion in butter until clear.
- Add broth and cut up squash; cook until tender.
- Puree squash when cool; season and add cream when cold.
- Sprinkle top with chives.
- Can be served hot or cold.
