Ingredients

  • 1 inch beef
  • 5 pounds buffalo
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 3 spanish onions coarsely chopped
  • 3 tablespoons fresh cilantro minced
  • 6 chipotle peppers minced
  • 6 hot chile peppers *, seeded & chopped
  • 56 ounces diced tomatoes drained
  • 8 garlic crushed or minced
  • 15 ounces tomato sauce
  • 1 can beef broth
  • 2 tablespoons worcestershire sauce
  • 8 tablespoons chili powder or to taste
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon sugar
  • 2 tablespoons ground cumin
  • 1 teaspoon marjoram leaves dried
  • 1 tablespoon oregano leaves dried Mexican
  • 2 tablespoons masa harina
  • 3 tablespoons thickener tapioca

Method

  • Preheat oven to 250 F. Place beef, peppers and other vegetables in large Dutch oven or enameled roasting pan, and mix together (do not brown meat).
  • Thoroughly blend seasoning mix ingredients together in a bowl (mixer or blender recommended). Pour Seasoning Mix over ingredients in Dutch oven/roasting pan and mix well. Cover and place pan in oven. Cook for 5 to 6 hours or until beef is tender and sauce has thickened.
