Ingredients

  • 1/2 bunch green onions, sliced
  • 1/2 small (1 lb.) pkg. vermicelli noodles
  • 2 lb. shrimp, rinsed and drained
  • 3 1/2 stalks celery, chopped
  • 1 1/2 c. mayonnaise
  • red wine vinegar to taste (about 1 Tbsp.)
  • 2 dashes seasoned pepper

Method

  • Cook noodles according to package directions and drain in cool water.
  • Add enough vinegar to mayonnaise to make it a salad dressing consistency.
  • Add remaining ingredients.
  • Chill.
  • Prepare a day ahead and add more mayonnaise, if needed, before serving.
