- 9 to 12 lb. venison, cut with the grain into 1/2 to 1-inch strips
- 4 Tbsp. brown sugar
- 6 Tbsp. salt
- 6 tsp. onion powder
- 6 tsp. garlic powder
- 9 tsp. pepper
- 2 c. Worcestershire sauce
- 1 1/2 c. soy sauce
- 6 Tbsp. prepared mustard
- 2 Tbsp. liquid smoke
Method
- Mix together and pour over meat.
- Marinate overnight.
- Remove meat and dry on paper towels.
- Place on cookie sheet in single layer and dry in 200° oven for 6 to 8 hours, or until it feels dry.
- Cool and put in airtight jar.
