Ingredients

  • 9 to 12 lb. venison, cut with the grain into 1/2 to 1-inch strips
  • 4 Tbsp. brown sugar
  • 6 Tbsp. salt
  • 6 tsp. onion powder
  • 6 tsp. garlic powder
  • 9 tsp. pepper
  • 2 c. Worcestershire sauce
  • 1 1/2 c. soy sauce
  • 6 Tbsp. prepared mustard
  • 2 Tbsp. liquid smoke

Method

  • Mix together and pour over meat.
  • Marinate overnight.
  • Remove meat and dry on paper towels.
  • Place on cookie sheet in single layer and dry in 200° oven for 6 to 8 hours, or until it feels dry.
  • Cool and put in airtight jar.
