Ingredients

  • 2 medium potatoes
  • 2 c. flour
  • 1/2 tsp. ground ginger
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/4 c. unsweetened cocoa powder
  • 1 c. butter
  • 2 c. sugar
  • 1 tsp. vanilla
  • 1 c. buttermilk
  • 1 c. finely chopped pecans
  • 1 c. raisins
  • 1 c. mashed potatoes

Method

  • Peel the 2 medium potatoes; cover with water and boil unti tender, about 25 minutes.
  • Mash thoroughly; do not add milk or seasonings.
  • Measure out 1 cup; cover to keep warm and set aside. Preheat the oven to 300°.
