Ingredients

  • 6 egg whites
  • 3 cups cooked brown rice (i used boil in the bag, 10 minutes)
  • 5 green onions, chopped
  • 1 teaspoon cayenne powder
  • 2 cups broccoli
  • 1 carrot
  • 12 of a celery
  • 8 ounces fat free cream cheese, chopped
  • 12 avocado, chopped
  • 14 cup low sodium soy sauce
  • 2 tablespoons olive oil
  • low sodium soy sauce

Method

  • cook rice as directed on package and put to the side.
  • cut carrots into thin stips.
  • chop celery into small pieces.
  • steam broccoli, carrots, and celery.
  • in a hot pan, heat oil, add green onions and cook for about 5 minutes.
  • add egg whites and 1/2 teaspoon of cayenne, mix around until eggs are cooked.
  • add rice and soy sauce and stir for about 5 minutes.
  • add steams veggies, avocado pieces, chopped cream cheese, and 1/2" teaspoon of cayenne mix over heat until melted.
  • taste and add soy sauce until flavor desire is met.
