Ingredients

  • 3 1/4 cups egg noodles
  • 5 3/4 tablespoons cabbage
  • 1/2 onion
  • 1 carrot
  • 1 piece ginger
  • 1 clove garlic
  • soy sauce
  • vinegar
  • salt chilli
  • oil
  • 1 green chilli
  • 2 spring onions

Method

  • Boil the noodles in a container making sure they are submerged completely in water. Add salt and few drops of oil. Remove from heat once soft and drain the excess water. Soak the noodles in cold water and keep aside.
  • Heat pan and pour 4 tbsp of oil. Add ginger and garlic, finely chopped and allow to simmer for some time. Add onions and let it cook for 2-3 mins.
  • Add cabbage and carrots and let it cook for 5 mins.
  • Add soy sauce and vinegar. Add chilli salt and cook for 1-2 mins.
  • Add the boiled noodles to the vegetables and mix well. Garnish with spring onions to serve hot.
