Ingredients

  • 3/4 lb. fresh asparagus, cut
  • 2 1/2 c. broccoli flowerets
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 2 carrots, scraped and sliced
  • 1 sweet red pepper, chopped
  • 1 sweet yellow pepper, chopped
  • 1 c. whipping cream
  • 1 c. vegetable broth
  • 4 green onions, chopped
  • 2 tsp. basil
  • 1/2 tsp. salt
  • 8 oz. linguine or thin spaghetti
  • 1/2 lb. fresh mushrooms, sliced
  • 1 c. grated Parmesan cheese
  • 1/4 tsp. ground black pepper

Method

  • Steam broccoli and asparagus for 6 to 8 minutes.
  • Remove from heat and set aside.
  • Saute onion and garlic in oil in a large pan until tender.
  • Add carrots and chopped peppers to onion mixture and saute until crisp-tender.
  • Remove from heat and drain.
