Ingredients

  • 4 c. cool cooked rice
  • 2 onions, minced
  • 2 tbsp. oil
  • 2 c. cooked shrimp
  • 1-2 Large eggs, slightly beaten
  • 1 c. mushrooms, sauteed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tbsp. soy sauce
  • Minced scallions

Method

  • Heat oil in heavy skillet.
  • Add in onions and lightly brown.
  • Add in shrimp.
  • Add in salt and pepper to beaten Large eggs and pour over shrimp and onions; scramble together.
  • Add in mushrooms, soy sauce and cool rice.
  • Heat till rice is warm, stirring occasionally to keep from sticking.
  • Sprinkle minced scallions on top.
  • Serves 4.
  • Note: Ham, chicken or possibly veal may be substituted for shrimp.
