Ingredients
- 4 c. cool cooked rice
- 2 onions, minced
- 2 tbsp. oil
- 2 c. cooked shrimp
- 1-2 Large eggs, slightly beaten
- 1 c. mushrooms, sauteed
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tbsp. soy sauce
- Minced scallions
Method
- Heat oil in heavy skillet.
- Add in onions and lightly brown.
- Add in shrimp.
- Add in salt and pepper to beaten Large eggs and pour over shrimp and onions; scramble together.
- Add in mushrooms, soy sauce and cool rice.
- Heat till rice is warm, stirring occasionally to keep from sticking.
- Sprinkle minced scallions on top.
- Serves 4.
- Note: Ham, chicken or possibly veal may be substituted for shrimp.
