Ingredients

  • 3 small zucchini
  • 1/2 onion
  • 1 carrot
  • 1 leek
  • 2 stalks celery
  • 1 c. lite mayonnaise
  • 1/2 c. grated Parmesan cheese
  • 1 c. lite cottage cheese
  • 1 tsp. pressed garlic
  • 1 tsp. ground pepper
  • 1 tsp. oregano
  • 1 tsp. chopped parsley
  • 1 pkg. lasagna noodles

Method

  • Finely chop zucchini, onion, carrot, leeks and celery. Saute vegetables in
  • oil.
  • Add
  • garlic, pepper, oregano and parsley. Set
  • aside.
  • Blend mayonnaise, Parmesan and cottage cheese. Layer
  • cooked lasagna noodles with vegetable mixture, then mayonnaise-cheese mixture. Bake 35 minutes in preheated 350° oven.
