Ingredients

  • 10 lb. tomatoes (put in hot boiling water and skin as in making tomato juice)
  • 1 c. chopped celery
  • 1 chopped green pepper
  • 5 chopped onions
  • parsley flakes
  • 1/2 c. sugar
  • 1/4 c. salt (this may be too salty; I use 1/8 c. salt)
  • 1/2 tsp. pepper
  • 1 pt. water

Method

  • Chop celery, green pepper and onions.
  • Cook these in a pressure cooker in 1 pint of water for 5 minutes.
  • When finished, run through blender to make pulp.
  • Add this and other ingredients to tomatoes.
  • Bring to a rolling boil and then put in jars. Process 10 minutes on number 5 pressure in pressure canner.
