Ingredients
- 10 lb. tomatoes (put in hot boiling water and skin as in making tomato juice)
- 1 c. chopped celery
- 1 chopped green pepper
- 5 chopped onions
- parsley flakes
- 1/2 c. sugar
- 1/4 c. salt (this may be too salty; I use 1/8 c. salt)
- 1/2 tsp. pepper
- 1 pt. water
Method
- Chop celery, green pepper and onions.
- Cook these in a pressure cooker in 1 pint of water for 5 minutes.
- When finished, run through blender to make pulp.
- Add this and other ingredients to tomatoes.
- Bring to a rolling boil and then put in jars. Process 10 minutes on number 5 pressure in pressure canner.
