Ingredients

  • 2 medium potatoes, peeled and sliced
  • 1 large onion, thickly sliced in rings
  • green and red pepper (wide strips and halved)
  • 2 or more cloves garlic, minced
  • 1/2 head cabbage, sliced
  • sliced zucchini (optional)
  • halved mushrooms (optional)
  • salt
  • pepper
  • parsley
  • about 1 Tbsp. chili powder or any spices you want
  • egg cubes *
  • imitation bacon bits
  • grated cheese

Method

  • *Mix egg whites and Egg Beaters.
  • Pour into warm pan.
  • Cook over low heat until set.
  • Let cool.
  • Cut into squares.
  • (Or if desired, use regular eggs.)
