Ingredients

  • 3 spring onions, chopped
  • 1 cup grated zucchini, squeezed to remove water
  • 1 cup grated carrot, squeezed to remove water
  • 4 eggs, lightly beaten
  • 1 cup grated KRAFT* Cheddar Cheese
  • 1/4 cup plain flour
  • 1/3 cup polyunsaturated oil

Method

  • Heat a little oil in a frying pan and cook spring onion and grated vegetables for 3 - 4 minutes or until spring onion is soft and moisture has evaporated.
  • Combine grated vegetable mixture with eggs, cheese, flour and oil.
  • Pour into a lightly greased round pie plate or shallow casserole dish.
  • Bake at 200C for 35 - 40 minutes or until set on top.
  • Allow to stand for 5 minutes before slicing into wedges.
  • Enjoy hot or cold.
