Ingredients

  • 1 naan bread, flatbread (or made from scratch pizza crust)
  • 1/2 cup vegan thai peanut sauce
  • 1/2 cup carrot, matchstick sliced
  • 1 mushroom, sliced
  • 1/4 cup tomatoes, sliced
  • 1/4 cup onion, sliced
  • 1/4 cup green onion top, sliced
  • 1/2 serrano pepper, thinly sliced
  • salt & pepper, to taste

Method

  • Preheat oven to 375.
  • Spread warmed peanut sauce on flatbread or pre-baked crust.
  • Layer remaining vegetables on peanut sauce covered crust.
  • Top with green onions, salt & pepper.
  • Bake for 12-14 minutes until crust starts to crisp up and brown.
