Ingredients

  • 1/2 c. chopped onions
  • 1/2 c. chopped celery
  • 1/2 c. chopped bacon
  • 1/4 c. chopped green peppers (optional)
  • 4 c. chicken broth
  • 1 c. clam juice, drained from canned clams
  • 1 tsp. salt
  • 1/4 tsp. white ground pepper
  • 2 c. diced potatoes
  • 1 c. canned or frozen corn kernels
  • 1 to 2 c. rinsed, diced clams
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 qt. half and half

Method

  • Brown first four ingredients.
  • Add chicken broth, clam juice, salt and pepper.
  • Add potatoes, corn and clams.
  • Cover and simmer about 20 minutes or until potatoes are soft.
  • In a separate pan melt and blend in butter and flour.
  • Slowly add half and half. Whip smooth and add to soup, cook 10 minutes.
  • Delicious with your favorite corn bread and honey.
